The tropical flavors of pineapple and citrus from the lemon zest add to its summer feel. The procedure is pretty easy and straightforward. Towards the middle of the baking process, the pineapple chunks are added as a topping to the cake and you continue baking it for a few more minutes. Bring this as a potluck dessert or enjoy with friends during barbecues.

Instead of the usual ube chiffon cake we, Filipinos are used to, I baked a pound cake using boiled ube (purple yam). This ube pound cake had a heavy, rich texture. This is one of the most iconic symbols of the holidays in the Philippines, although the ensaymada is available year round, too. Since I cannot find any good ensaymadas here in America, I started baking my own batch. The two-day process may seem tedious at first, but once the buttery buns are out of the oven, you will realize it was all worth it. Bake them ahead, freeze and reheat them for a more convenient pace.
