This is a Filipino Pork Tenderloin dish, of Ibanag-origin, sauteed in onions, garlic and fresh ginger. The pork slices are thin and after a few minutes of sauteeing result in a tender, savory and tasty dish. The fresh ginger combined with the salty Bagoong Monamon (bottled salted anchovies) defines the flavors of this entree. This is easy to prepare and great for brunch or dinner any day of the week

I always ask for this dish when we travel back to the Philippines. But I can't always wait for a trip to Asia for this, so I learned to cook this stuffed fish in my American kitchen. The process of making this involves slicing the fish in the back, removing its meat and sauteeing the fish meat in savory condiments. After the saute, fill the fish with the stuffing and tie it up, then pan fry.

In the Philippines, this is a cure-all for sore throats, coughs, colds, or upset stomachs. It is also recommended to soothe vocal chords. It can also serve as a wellness beverage. The combination of a fresh ginger brew, honey and citrus juice like calamansi or lemon provide curative effects when taken often.

Filipinos love burgers and this dish has all the familiar flavors of a soy sauce-based entree. For my recipe version, I used both ground beef and ground pork. This cooks quick and easy for a family meal any day.
