Similar to the Filipino classic pancit bihon or sotanghon guisado, this is a dish which has cellophane noodles and assorted vegetables. The term japchae is Korean for mixed vegetables, I was told. I cooked the egg omelet, and the vegetables and beef strips individually, then mixed them all together with the noodles at the end. This noodle dish is a good balance of sweet-savory flavors, with crisp vegetables and silky noodles all blended together. ]]></description>
