This is one of the easier bread recipes I've used and relied on for years. I used fresh, ripe Korean pears.

In the Philippines, we call this type of squash kalabasa or kulabasa in Kapampangan. Some recipes also refer to it as the Japanese squash. It looks like a large, green pumpkin on the outside and has a bright orange flesh inside. I have cooked different recipes with kabocha squash – from main dishes, sides and even desserts or merienda fare. This soup is one of our family’s favorite.

If you prefer, use fish fillets for this recipe using the same seasonings and procedure but instead put the stuffing on top. There is something about the combination of ginger, lemon and rice wine that gives fish and seafood that fragrant Asian aroma and right amount of saltiness to this simple, homespun entrée.

This is so convenient to cook especially on a busy weeknight. Or on weekends, if you want to spend less time in the kitchen but would still like a home-cooked meal. Stir fry vegetables in season. Throw in some savory ham cubes. Mix it all up and serve with a bowl of boiled rice.

The combined fruits baked well on a bed of glistening vanilla-flavored custard all encased in a homemade flaky crust.
