Hefty quartered potatoes and slices of bell peppers are added to the rich stew, thickened with bread crumbs. Sometimes, I cook this dish a day ahead which gives the tomato sauce flavors time to blend and taste even sweeter. I offer two ways to cook this in the procedure: In the Instant Pot which cooks quickly or the classic, stove-top way.

This is a dish that took minutes to prepare and cook. It's the kind of meal you can whip up on busy weeknights or family meals on weekends. And if you're looking for a great, easy side dish to complement the roasts during holiday gatherings, double the amount of this and serve it to guests. Cook this dish the day you purchase the shrimps from the market for best results.

After simmering the boneless chicken breasts in mango juice in the inside pot, I sliced the chicken and put together a colorful, flavorful salad of greens and fresh, ripe mangoes. Use frozen mangoes as substitute if more convenient.
