This is the Filipino version of meatloaf. I combined pork and beef together with the other ingredients including green peas, bell peppers and carrots. The Hardinera loaves are then steamed for a delicious family meal.

You can cook this in the Instant Pot or on the stove-top and I share both ways here. In the Philippines, an entire steamed cake is given as a gift for the Lunar New Year to symbolize prosperity and good luck. When we received it, we pan-fried slices to soften it up. Once pan fried, each warm slice was crisp on the outside while sticky soft inside. The yellow coating of the eggs are close in color to 'gold', a symbol of prosperity. The chewy, gummy consistency of the tikoy rice cake are supposed to make sure the luck 'sticks'. We enjoy these delicious, savory strips of tikoy rice cakes served as a snack or side during Chinese New Year. Tikoy is a hearty, heavy and filling snack that's also good all year long.

If you ever find over ripened bananas in your fruit bowl, do not discard them. Yes, the softer the fruit is and the darker the outer skin, the sweeter this banana bread will be. Simply mix together the basic ingredients, including the mashed bananas. Bake it in a regular bundt cake pan, then once it is done and cooled off, make an easy glaze stove top with a bunch of chocolate chips and heavy cream.
