This recipe by Leah Tolosa, is closely similar to what my late mom used to cook for us. I’ve cooked embutido for as long as I’ve been cooking in the kitchen, when my kids were growing up and even now when I need to serve a quick meal filled with warm, comforting foods. This recipe from the cookbook makes three loaves wrapped in aluminum foil.
