His cookbook recipe inspired my grilled chicken dish. Alex explains the term 'inasal' is a native Ilonggo adaptation of the Spanish word 'asar' or 'to roast'. The chicken pieces for this recipe were marinated in vinegar, annatto (achuete) oil, garlic, ginger, soy sauce and calamansi, the Filipino lime. ]]></description>
