This was popular party fare from my mother's time. But today, I love to cook this for its ease, simplicity of preparation, accessible ingredients and superb flavors. One has to marinate the chicken overnight in red wine vinegar, garlic, capers, prunes, bay leaves, white wine and seasonings, and then bake it the next day. Mom cooked this for our Sunday family meal. What looks like a multi-course meal is actually easy to cook by simmering all the meats: ham, chicken, beef, pork, Spanish chorizos and vegetables together.
