The thick batter mixes quickly with an electric mixer and bakes in under an hour. The result is a buttery-fragrant rich, dense cake that is crisp on the outside and chewy-gooey soft inside. Some say this cake is similar to the Filipino cassava or bibingka, and this is why it's a personal favorite of mine for potlucks, family gatherings, after-school snacks, or a dessert for dinner.

Its ease and simplicity make it a popular starter to Filipino meals, whether it's a family dinner or party fare. Similar to the Filipino classic pancit bihon or sotanghon guisado, this is a dish which has cellophane noodles and assorted vegetables. The term japchae is Korean for mixed vegetables, I was told. I cooked the egg omelet, and the vegetables and beef strips individually, then mixed them all together with the noodles at the end. This noodle dish is a good balance of sweet-savory flavors, with crisp vegetables and silky noodles all blended together.

Fill the delicate, pre-soaked Vietnamese rice wrappers with julienne strips of assorted vegetables. Roll, slice, and serve with a side of savory peanut sauce, or other Asian sauces preferred.

This meatless dish cooks fast and easy with thin wheat noodles, stir-fried with toyo (soy sauce), oyster sauce, and Shaoxing wine. Sprinkle scallion greens and some lemon juice at the end, for a quick lunch, merienda snack, a side dish, or even a midnight meal
