Filipinos serve these as a main course, or an appetizer, and even 'merienda' (afternoon snack). After steaming, the plump and chewy rice grains encase the savory pork balls for a superb meal. It makes a great dish for St. Patrick's Day anytime year round. The entree starts with boiled potatoes and apple slices sauteed with onions and sausages in the butter. A topping of crisp bacon finishes the dish after it comes out of the oven. This is a wonderful meal that transcends from breakfast, lunch to dinner.

The word nilaga translates to boiled so this is a stew with ‘boiled chicken’. The clear chicken broth is flavored with fish sauce, scallions and onions. You can be as versatile as you want with this dish, by adding quartered potatoes, carrots and green beans. I added robust, smokey Chinese sausages to pack another layer of flavor. I offer two ways to cook this in the procedure: Instant Pot or the traditional stove-top way.

In this recipe, I boiled the fish first in water and seasonings. Then I added the cooked tulingan to the vegetable sauté and coconut broth.
