Calamansi is the Filipino lime, and are tiny, round, citrus fruit. They have a piercingly-sweet aroma, and its tart taste enhances food flavors when used as a seasoning. Inspired by the classic Pinoy bistek, I used the same marinade for this salmon entree which was pan-fried and ready in under thirty minutes.

In this Pesang Tilapia with Mashed Tofu and Tomatoes, the fish is boiled in a broth flavored with fresh ginger, onions, garlic and simmered with potatoes, tomatoes and bok choy cabbage. In the Philippines, other ingredients added are green papaya fruit slices. I substitute potatoes when green papayas are not available in Asian markets here in America. A side dish of mashed tofu with tomatoes, flavored with soy sauce and calamansi is served with this soup meal.

If you prefer, use fish fillets for this recipe using the same seasonings and procedure but instead put the stuffing on top. There is something about the combination of ginger, lemon and rice wine that gives fish and seafood that fragrant Asian aroma and right amount of saltiness to this simple, homespun entrée.

The popularity of furikake has grown in America in the last few years. It is often sprinkled on rice, vegetables and fish when cooking. I added a thin layer of mayonnaise on top of the salmon before sprinkling the seasoning, which made the fish moist and juicy. My mom's 'pescado con mayonesa' recipe of long ago came to mind when I spread the mayo all around.
