This is one of the most iconic symbols of the holidays in the Philippines, although the ensaymada is available year round, too. Since I cannot find any good ensaymadas here in America, I started baking my own batch. The two-day process may seem tedious at first, but once the buttery buns are out of the oven, you will realize it was all worth it. Bake them ahead, freeze and reheat them for a more convenient pace.
