This was popular party fare from my mother's time. But today, I love to cook this for its ease, simplicity of preparation, accessible ingredients and superb flavors. One has to marinate the chicken overnight in red wine vinegar, garlic, capers, prunes, bay leaves, white wine and seasonings, and then bake it the next day. She cooked and served this often to us during our childhood years. In turn, I’ve done the same for my sons when they were growing up. It’s sheer comfort food and a hearty all-in-one weekend meal. The popularity of furikake has grown in America in the last few years. It is often sprinkled on rice, vegetables and fish when cooking. I added a thin layer of mayonnaise on top of the salmon before sprinkling the seasoning, which made the fish moist and juicy. My mom's 'pescado con mayonesa' recipe of long ago came to mind when I spread the mayo all around.]]></description>
