Ube (purple yam) grows in the Philippines and is in season there in the late months of the year. For these pastillas, I used frozen boiled ube, rice flour, flavorings, and ube-flavored sweetened condensed milk. These delightful, soft ube milk candies are wonderful for desserts or snacks.

Each region in the Philippines has their bragging rights to their own special version of adobo, the unofficial national dish. Each one is as scrumptious as the next. I often see adobo with atsuete cooked in the Iloilo and Visayas region in the Philippines.

One needs fully ripened, sweet mangoes for this. Mango season here in the USA is from spring to mid-summer. However, these days, one can find mangoes nearly all year round in large American markets. It is also a good time to find mangoes on sale. Those not so perfect-looking fruit which store owners are ready to discard can be perfect for this process.

This is one of the easiest soup meals to cook. You can make this in different ways: In a large stockpot on the stove top, in a slow cooker or the current favorite Instant Pot. Boil and simmer the pork chunks first in clear broth flavored with patis. Then toss in the vegetables and simmer till done.

I baked together with Alicia, my sister-in-law who lives in Canada. We baked these to honor her late Mama who loved chocolate. Make these in stages. I baked the cupcakes a day ahead and froze them. I made the vanilla frosting the next day. As a shortcut, Alicia used gum paste (from Wilton's) to make the roses. She is a more patient and better artistic cake decorator than I am, thus we used her photos here.

I’d like to surprise her with a dish. Can you suggest a recipe?” My reply to reader-friends is always “Start simple. Cook an easy dish like a Mushroom-Vegetable Breakfast Casserole.
