Similar to the Filipino classic pancit bihon or sotanghon guisado, this is a dish which has cellophane noodles and assorted vegetables. The term japchae is Korean for mixed vegetables, I was told. I cooked the egg omelet, and the vegetables and beef strips individually, then mixed them all together with the noodles at the end. This noodle dish is a good balance of sweet-savory flavors, with crisp vegetables and silky noodles all blended together.

For the stir-fry sauce base, you can either use homemade shrimp stock or vegetable stock (store-bought is fine). Both are delicious either one you choose. The shrimp stock adds a rich, full-bodied flavor. Scale up on vegetables in this recipe or add what you have in season.

I stir fried the large shrimps together with the vegetables first, poured the sauces, added the seasonings, then incorporated the noodles. This cooks quick and easy, and is a fast, delightful way to serve lo mein noodles for a family meal, any day.

The sauce base was savory and slightly spicy, flavored with patis (fish sauce) and siling labuyo (bird's eye chilies).
