Inihaw na Baboy - Grilled Pork - Air Fryer Ninja Foodi

Inihaw na Baboy translates to Grilled Pork, which is a classic Filipino grilled meat entree. Use a good cut of pork belly or shoulder, fat trimmed. Marinate overnight in cider vinegar, lots of garlic, salt and black pepper. Grill the whole slab on the Ninja Grill if you want to stay indoors. Or on the outdoor barbecue grill if preferred. Serve immediately with a side dipping sauce of spicy vinegar. This is an Asian in America recipe by Elizabeth Ann Quirino.

Equipment

Ingredients

  • 2 pounds pork belly or pork shoulder, fat trimmed, boneless

For marinade:

  • 2 Tablespoons finely minced garlic, about 8 cloves
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper powder
  • ½ cup cider vinegar
  • 1 Tablespoon soy sauce
  • 1 Tablespoon lemon juice
  • 1 cup ginger ale

For dipping sauce:

  • 1 cup vinegar, cider or white
  • 4 cloves garlic, peeled, minced
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 pieces siling labuyo (bird's eye chilies)
  • 2 stalks scallions, chopped

For cooking:

  • cooking spray

For serving:

  • steamed or garlic rice

Instructions

To marinate:

  • Combine all the marinade ingredients in a bowl.
    Add the whole slabs of pork to the marinade. Prick the meat with a fork randomly all over.
    Keep the marinated pork belly or shoulder in a resealable plastic bag and refrigerate overnight.

To cook in the Ninja Grill Air Fryer:

  • Take the pork out of the refrigerator. Discard the marinade liquid.
  • Spray the inside of the grill with cooking spray.
    Pre-heat the Ninja Foodi at 375 F for about 5 minutes.
  • Place the whole slabs of pork belly inside the Ninja Foodi
    Spray a little of the cooking spray on the meat.
    Cook at 375 F for about 20 to 25 minutes. Flip the meat, using a pair of tongs, at the first 10 minutes.
    *If using the Ninja Foodi, it would be the air crisp function.
  • When done, place the slabs of pork on a cutting board.
    Chop into 1-inch cubes or serving pieces. Serve warm immediately after cooking in the Ninja Grill.

To prepare dipping sauce:

  • Combine all the ingredients in a bowl of mason jar. Mix well. Keep refrigerated till ready to serve.

To cook on the outdoor grill:

  • Clean the grates well and remove previous food residue.
    Spray the grates with cooking spray.
    Pre-heat the outdoor grill to High.
    Place the entire pork slab on the grill. Grill for about 30 to 35 minutes per pound of boneless meat, turning after the first 12 minutes.
    When done, chop into 1-inch cubes. Serve warm immediately with a side dipping sauce and steamed or garlic rice.
