We devour these quickly when I make a batch using the familiar ingredients of traditional oatmeal, flour, eggs, sugar, vanilla, and with the delicious addition of raisins and chocolate chips. You can even make these cookies ahead and freeze them till you're ready to enjoy them. These make great gifts, lunchbox treats, snacks or desserts.

Filipinos love cheesecake and mangoes are the country's national fruit, so why not combine these luscious ingredients and make a scrumptious mango cheesecake. This is the perfect chilled dessert for a warm summer day, for the family weekend or any day one craves cheesecake flavored with tropical mangoes.

I put together some favorite Filipino and Asian summer recipes for the Memorial Day weekend and the coming sultry, hot months. Memorial Day, a moveable holiday here in America, falls on the last Monday of May and marks the start of the summer season. It is a time of remembrance for the military men and women who lost their lives in the service of their country. It is also a long weekend of family and friends gathering and celebrating with food.

Traditionally, Pichi-Pichi is cooked by steaming stovetop. I'm sharing how to cook this kakanin in the microwave, in half the time, without losing the delectable, mild-sweetness of this favorite snack or dessert.

The thick batter mixes quickly with an electric mixer and bakes in under an hour. The result is a buttery-fragrant rich, dense cake that is crisp on the outside and chewy-gooey soft inside. Some say this cake is similar to the Filipino cassava or bibingka, and this is why it's a personal favorite of mine for potlucks, family gatherings, after-school snacks, or a dessert for dinner.

This is one of the easiest types of creamy, luscious cheesecake desserts to bake, at a high oven temperature, but with a shorter baking time. This was inspired by the original Basque Burnt Cheesecake created by Chef Santiago Rivera of the La Vina Restaurant in San Sebastian, Spain.

Its soft, air-like texture makes it an ideal dessert for warm months, but it is just as superb served all year round. I topped this cake with fresh berries and a sprinkling of powdered sugar to make it even more flavorful.
