The filling is first cooked in a broth of coconut with curry and Greek yogurt. Pile the flavorful curried chicken filling into the flaky, buttery 2-crust pastry and bake. Serve this pie fit for royalty with a side salad of greens, and a pot of piping-hot tea.

Instead of using beef, which Filipinos are familiar seeing in beef calderetta, I used chicken cuts for this recipe. The flavors are as scrumptious as the classic favorite often cooked for Filipino fiestas, parties, or family gatherings. This is a wholesome, hearty entree that is enjoyable for the holidays or all year round.

This is an easy recipe of chicken braised in a simmering broth which has vinegar, soy sauce, garlic, peppercorns, bay leaves, salt and pepper. The chicken is simmered over low heat till the sauce is reduced to a thick gravy.

The latter often uses pork. For this breakfast or brunch entree, I used chicken breasts and thighs, an alternative wholesome change. Curing the meat in the freezer takes around three days. But once thawed, pan frying the meat on the stovetop takes 20 minutes to transform into a luscious, tender chicken tocino that's both sweet and savory. Best served with sinangag (garlic rice), eggs, and tomatoes.

This was adapted from Ina Garten's recipe featured on The Kitchn.
