Ube (purple yam) grows in the Philippines and is in season there in the late months of the year. For these pastillas, I used frozen boiled ube, rice flour, flavorings, and ube-flavored sweetened condensed milk. I tried to recreate what a famous Filipino restaurant serves and my family loved the homemade version best. First, oven-bake the chicken cutlets. I added ube (purple yam) to my homemade tikoy to give it a sweet flavor and aroma. In the Philippines, steamed cakes are gifted for the Lunar New Year for prosperity and good luck. We cooked it by pan-frying. Each warm slice gets crisp on the outside while sticky soft inside. The yellow coating of the eggs are close in color to 'gold', a symbol of prosperity.]]></description>

You can either make several small tarts or a large pie from this recipe. For the filling, use fresh ube and boil it till it's soft like mashed potatoes. Or use frozen ube- purple yam, mashed form which can be found in Asian groceries. Try making this ube filling ahead like I did. It saved me the cooking time.
