Shrimp Fried Rice with Pineapple
Shrimp Fried Rice with Pineapple is a scrumptious blend of sinangag, or garlic fried rice as Filipinos call it, with fresh shrimps, strips of Spam or else Taylor Pork Ham, garlic, onions, scallions, bell peppers, green peas and corn, plus seasonings. This is a quick stir-fry that can be made from leftovers, especially day-old, refrigerated cooked rice. Pineapple chunks are added to sweeten the mix. Serve this as a side or a meal in itself from brunch to dinner. This is a recipe from The Quirino Kitchen by Elizabeth Ann Quirino.
