In this recipe, I boiled the fish first in water and seasonings. Then I added the cooked tulingan to the vegetable sauté and coconut broth. I have passed on this recipe to my son, Constante who like his grandfather enjoys fish dishes very often. This entree offers a savory-flavored fish simmered in a rich, thick broth of coconut milk with a saute of ginger, onions, garlic and vegetables.

It's also my preferred one to cook because I can prepare an all-in-one meal. Both the salmon and eggplant can be cooked in the same skillet and served with the syrupy, thick teriyaki sauce. Salmon has always been a favorite, go-to ingredient for my busy weeknights. It is thicker and meatier than most fish. Thus, it is hearty enough to fill us up. And paired with a hefty serving of steamed jasmine rice, then that’s the perfect meal right there.

This popular Filipino dish can also be cooked using other fish varieties like tilapia, and lapu-lapu (snapper). After the stuffed fish is wrapped and tied with large banana leaves, it can be cooked in different ways: deep-fried, charcoal-grilled outdoors or baked and broiled in the oven like I did for this recipe. Serve this fish entrée with a side of Mango-Tomato salsa and you’re all set for an amazing dinner.
