This is a simple method of soaking the eggs in a salt-water brine solution for more than 3 weeks, then boiling the eggs afterwards. The results are a hard-boiled, salty egg version which can be used as ingredients for salads, steamed buns, on pastries and rice cakes, or even to coat potato chips. This was a recipe shared by the late Pinoy Chef Theodore "Day" Salonga"

Some Filipino dishes and desserts are favorites and keep coming back to the table, by popular demand, especially during the holidays. I’ve put together a list with links to the recipes on this blog. You can enjoy them for the Christmas holidays, the New Year’s or any milestone your family celebrates throughout the year. These dishes are favorites because they are timeless and bring the family together.

Instead of using beef, which Filipinos are familiar seeing in beef calderetta, I used chicken cuts for this recipe. The flavors are as scrumptious as the classic favorite often cooked for Filipino fiestas, parties, or family gatherings. This is a wholesome, hearty entree that is enjoyable for the holidays or all year round.

Its ease and simplicity make it a popular starter to Filipino meals, whether it's a family dinner or party fare. Saute garlic, onions, and celery, then braise a few chicken cuts to flavor the stockpot. Pour the patis and stock and let it simmer. Add sotanghon noodles, julienned carrots and cabbage to complete the hearty soup.
