Ube Waffles with Crisp Chicken

Spring brings hope, excitement and color to our lives. Just like these Ube Waffles with Crisp Chicken. These are popular fare at a Filipino fast food restaurant. But I like to recreate dishes at home and so, this happened. This is brunch fare. But you can switch menus around and enjoy these for dinner, as well. There are no hard and fast rules to eating fun food. Besides, the combination, which Pinoys love, is divine.
You start by baking the chicken cutlets. I used bone-in thighs and legs, which took slightly longer in the oven. Use boneless cuts like breasts if you prefer a shorter cooking time for the chicken. While the chicken is baking, start on the ube waffles flavored with purple yam powder and extract.
The waffles come out crisp and superb. Their sweet flavors are a scrumptious backdrop to the crunchy, salty oven-baked chicken. Slather on the butter, pour the syrup and savor the crunch. This meal reminds you why life is so good.

Ube Waffles with Crisp Chicken
Equipment
- Large rimmed baking tray
- Waffle Maker
- Large mixing bowl
- 3 medium-sized bowls
- Large baking sheet
Ingredients
For the oven-baked chicken:
- 8 pieces chicken thighs and legs, bone-in, skin-on
- 2 teaspoons salt, divided
- ½ teaspoon paprika powder
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 cup all-purpose flour
- 2 whole eggs, beaten
- ¼ cup milk
- 1 ½ cups Panko bread crumbs, or use regular-sized bread crumbs, unseasoned
For ube waffles:
- 1 ½ cups all-purpose flour
- ½ cup ube powder
- ¼ cup warm water
- 2 Tablespoons granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 ¼ cups milk
- 2 whole eggs, beaten
- 2 teaspoons McCormick Ube-flavored extract
- ½ teaspoon purple food color (Wilton's), optional
For serving:
- butter
- maple syrup
Instructions
To oven-bake the chicken:
- Preheat oven to 375 F degrees. Prepare a baking sheet - line with aluminum foil or parchment paper. Set aside.Prepare 3 medium-sized bowls. Fill them according to this order:Bowl 1 : Flour, 1 teaspoon salt, 1/2 teaspoon black pepper.Bowl 2: Eggs, milk, 1/2 teaspoon salt, 1/4 teaspoon black pepper.Bowl 3 : Panko bread crumbs, 1/2 teaspoon salt, 1/2 teaspoon paprika, 1/4 teaspoon black pepper, 1/4 teaspoon each of garlic and onion powders.
- Dredge each of the chicken pieces into the bowls in this order:First, Bowl 1Second, Bowl 2.Third, Bowl 3.
- Place the coated chicken pieces on the baking sheet. Do not overlap. Lay them side by side, with about 1/2 inch between pieces.Bake the chicken at 375 F for about 45 to 50 minutes.When done, take out of the oven. Serve warm together with the Ube Waffles.
To cook the Ube Waffles:
- Grease the inside griddle of the waffle maker with cooking spray.Preheat the waffle maker for at least 6 minutes.In a large mixing bowl, combine all the ingredients for the batter. Mix well.
- Using a ladle or a measuring cup, pour about 1/2 cup of the ube batter into the pre-heated waffle maker.Close the lid. Cook the waffles for about 5 to 6 minutes. Watch the indicator (if your appliance has one) to see if waffles are cooked.Open the lid. Use a pair of tongs or large turner to remove each waffle.Repeat the process. This batter makes about 6 large waffles.
- Serve the waffles warm together with the oven-baked chicken.Serve the waffles with butter and maple syrup.
