Lemon Cupcakes with Lemon Glaze and Golden Syrup

 What better way to celebrate the “Love Month” and spread some love than by baking something special for your loved ones? I got a nice guest blogger who dropped by and shared just that with me today!

Today, I’m honored to bring to you Rebecca Subbiah RD, also known as @chowandchatter on social media. She’s been a great friend and has kindly come to “help me out” with a recipe, while I’m on the road right now. So stay glued to your seats, this is going to be yummy….

 

I was thrilled when the lovely Betty Ann, asked me to guest post on her blog, we have been tweeting for a while. I always enjoy learning about Filipino cuisine and talking about being a Mum with her, she has two grown up boys.

 

 

 I wanted to pick a recipe from my homeland of Great Britain and something that I made with Jasmine my daughter. Its not the prettiest of cupcakes but tastes great. There’s a famous pudding with golden syrup at the base (treacle pudding) often served warm with custard in the UK, its something my brother and I would often request for pudding. So I decided to make a lemon cupcake with a golden syrup and lemon glaze to mimic this as a cake.

 

LEMON CUPCAKES  With A Golden Syrup & Lemon Glaze

By: Rebecca Subbiah RD, of Chow and Chatter

Ingredients:

4 oz of self raising flour

4 oz of sugar

4 oz sugar

4 oz butter

juice of 1/2 a lemon

about a tablespoon of lemon zest

1/4 cup golden syrup

2 small eggs

 

Method:

Cream the butter and the sugar until fluffy .

Add the eggs, lemon juice and flour.

And add the batter to cake papers and bake at 350 for 10-15 minutes until a knife comes out clean.

Meanwhile heat the golden syrup in a microwave for 10 – 20 seconds and add the lemon peel.

Drizzle over the cakes and enjoy.
