Mango Strawberry Salad with Honey-Vinegar Dressing

Mangoes are in season and sweeter than ever so it’s the best time to make this Mango Strawberry Salad with Honey-Vinegar Dressing. And just as scrumptious are fully ripened strawberries, large and luscious and tempting me to bite into them every chance I get.
Inspired by Robyn Webb, co-founder of the “Eat Write Retreat” Conference in Washington D.C., I tried to recreate this refreshing salad. It was an easy big bowl of green abundance to put together. And to make it more interesting, I served a delightful dressing alongside it.
I used the Honey Ridge Farm Serrano Chile Balsamic Honey dressing, which had the all time favorite balsamic flavor, but fired up with a spice that was skyrocketing.
The crunch of the cucumbers, lettuce greens went well with the sweet, fruity flavors of the ripe, golden mango slices and the bright red strawberry slices. It was colorful, lively and absolutely amazing!
So taking a cue from the delicious salad creation of the fantastic Robyn Webb, I made this similar fruit and vegetable side. And instead of making my own , I used my favorite honey dressing from Honey Ridge Farms.
MANGO STRAWBERRY & LETTUCE SALAD with Honey Vinegar Dressing
3 cups shredded lettuce
2 cucumbers, peeled, seeded, sliced
2 large mangoes, pitted, sliced thin
1 cup sliced strawberries
¼ cup sliced red onions
½ cup sliced peppers
1 bunch coarsely chopped parsley, for garnish
Honey Ridge Farms Serrano Chile Honey Vinegar Dressing
- Wash and dry the lettuce.
- Peel and slice the cucumbers. Prepare the mangoes and strawberries as directed.
- Toss all the fruit and vegetable ingredients together in a bowl. Garnish with parsley.
- Serve the honey vinegar dressing on the side.
COOK’S COMMENTS: For this salad, I used the “ataulfo” mango variety, which some merchants refer to as “champagne” mangoes. Feel free to substitute other types of mangoes that you prefer.
