Meyer Lemon Frozen Margarita

When friends send you Meyer lemons, you must absolutely make Meyer Lemon Margarita. I recently received a bounty of sweet lemons from my friend Gemma, all the way from San Francisco. I got cooking and baking with them right away.
Meyer Lemons are sweeter than the regular tart lemons. This variety is in season only from November to March. I sliced them open and the fragrance was as sharply sweet as the citrusy Calamansi (calamondin) from the Philippines. I used the whole bunch I got in various ways: As a marinade, a condiment, and a baking ingredient. I had a few last ones left, and so, I whipped up a refreshing frozen Margarita. The Meyer Lemons added an exhilarating zing to the iced citrus concoction. This drink would be perfect, and easy for any celebration, whether you’re having a party, or scaled down to a small get-together at home.
Today, if only for a few minutes, as we welcome the New Year , allow yourself to be possessed by an optimistic spirit. Search your hearts for at least one thing which you were grateful for the past year. You’ll be surprised by the gentle warmth the thought brings you.

Meyer Lemon Frozen Margarita
Equipment
- 1 Blender
- Margarita glasses
Ingredients
- 2 Tablespoons coarse salt
- 4 to 5 whole ice cubes
- ¾ cup tequila
- ⅔ cup juice from Meyer lemons
- ½ cup corn syrup
- fresh slices of lemon, for garnish
Instructions
To prepare Margarita glasses:
- Moisten the rims of the Margarita glasses with cold water. Then dip them immediately in a small bowl filled with coarse salt.Chill the glasses in the refrigerator for at least 30 minutes.
To mix the Margarita:
- Combine the ice cubes, tequila, lemon juice, and corn syrup in a blender.Pulse and blend for 2 minutes until the concoction is smooth.Pour the frozen cocktail immediately into the Margarita glasses. Garnish with fresh lemon slices. Serve chilled.
